1.Two days before, thaw the frozen pre-cooked Homestyle Plain Omelettes under refrigeration at <40°F / 4°C.
2.Preheat convection oven to 300°F / 150°C. Remove omelettes from the refrigerator and place on parchment-lined baking sheet(s). Place in preheated convection oven and heat for ~11 minutes until internal temperature reaches 165°F / 74°C held for at least 15 seconds. Remove from oven and place 1 slice (20 g) cheddar cheese on each omelette. Broil in oven for 1-2 minutes or until the cheese is melted and bubbly. Transfer to a 2” deep insert pan and cover with lid. Hold at >140°F / 60°C until service.
3.Wash medium tomatoes under cool running water and clean. Slice each tomato into 5 slices (~40 g slices). Wash green lettuce leaves and break into 7 g leaves. Set aside until ready to assemble the sandwiches.
4.At point of service assemble the sandwiches. Open the bun and spread 1 tbsp / 30 ml of Thousand Island Salad Dressing on the bottom of the bun, top with 1 lettuce leaf (7 g), tomato slice (40 g), heated Homestyle Plain Omelette with cheese, and lastly the top of the bun. Serve immediately.
